Extra Crispy Oven-Baked French Fries, Scrumptious & Stays Crispy Long After!

Thanks to Emily at Layers Of Happiness, here’s a simple recipe for the perfect fries with crispy edges and a soft center without all the grease. No need to look any further because it’s a grand-slam recipe that outdoes the rest and worth every single bite!

A simple recipe with key steps. Each step guarantees the crispiness of the fries, from soaking to remove the starch, cutting into 1/4″ thickness, coating in olive oil, using parchment paper (the best) and ensuring space in-between each fry so they won’t steam, and the finale quick double-bake method.

HOW TO MAKE EXTRA CRISPY OVEN-BAKED FRENCH FRIES

Preparation time: 45 minutes

Ingredients:

    Seasoning Mix: (See Notes)
  • 2 Tbs seasoned salt
  • 1 Tsp chili powder
  • 1 Tsp dried basil
  • 1/8 Tsp cumin
  • 1/8 Tsp black pepper
    Potato Fries:
  • 3 medium russet potatoes (best for perfect crispy fries)
  • 1-2 Tbs olive oil
  • 2 Tbs grated Parmesan (optional)

Directions:

  1. Combine seasoning ingredients in a small bowl; set aside (see Notes).
  2. Wash and peel the potatoes. Cut off the ends. With a very sharp knife, cut the potatoes into thin 1/4″ wide slices.
  3. Add the fries to a large bowl and cover with cold water. Allow them to soak at least 30 minutes (can also soak overnight). Place in the fridge if soaking for more than an hour.
  4. After the fries have soaked, drain, rinse, and lay the fries on a paper towel lined cooling rack to dry while you preheat the oven to 400 degrees. Blot the tops with additional paper towels to absorb any excess moisture.
  5. Line a 13×18-inch jelly roll baking pan with parchment paper or foil and spray with non-stick spray. Make sure the previously used bowl is dry and add the potatoes to it. Add 1-2 Tbs of oil and 1/2 – 1 Tbs of the seasoning mixture based on how much salt you prefer. Toss around to mix.
  6. Evenly line the baking pan with the fries in a single layer. Don’t overlap or the fries won’t cook properly. Bake for about 30 minutes, flipping with a spatula once or twice after 15 minutes of cooking.
  7. Increase heat to 425 degrees and continue baking until the edges look a little burnt.
  8. Sprinkle the fries with the remaining seasoning mix and Parmesan cheese (optional). Serve immediately.

Notes:

  1. The seasoning goes on the potatoes both before and after baking. You could also sprinkle some grated Parmesan on the fries after baking as well.
  2. Parchment paper is key in keeping the fries from sticking and getting the best crisp on the outside while keeping a soft inside.
